Yummy Easter Basket Cupcake

This cupcake is one that everyone can do! It's so simple and fun, even the kids can help.
Cupcake with foil covered chocolate eggs.

 

Supplies Needed:
Making Modeling Chocolate (White or Colors)
  • 1 lb. white chocolate wafers
  • 1/4 cup light corn syrup
  • powdered sugar
  1. Melt chocolate in microwave slowly or on top of double boiler, remember do not boil your water.
  2. Stir in corn syrup until well blended. Note: mixture will get very thick almost immediately.
  3. Cover mixture and let set at room temperature several hours.
  4. To use, dust surface with powdered sugar and knead small portions until softened. Modeling chocolate will be VERY HARD, the heat of your hands softens it. If needed, chocolate may be microwaved for 10-20 seconds.
  5. Use for sculpting, ribbons, baskets, flowers etc.
  6. Excess may be wrapped tightly in plastic wrap for storage.
*We have experimented with other recipes out there, and found some using white chocolate or colors tend to be too soft wile working with it. Other recipes you have to wait a couple of days to be able to use it and when you do, it gets too soft. We have adjusted this recipe so it works well and tastes good.

Making 3-D Chocolate Foil Eggs
  • Chocolate
  • Mold
  • Foil wrappers
  1. Melt chocolate in microwave slowly or on top of double boiler, remember do not boil your water.
  2. Pour melted chocolate into candy mold and tap on table to remove air bubbles and flatten back.
  3. Place in freezer for approx. 10 minutes.
  4. Remove eggs from mold and pour more melted chocolate into your mold, tap on table. Take an egg that is done and place on top of an egg that you just poured and press lightly so they stick together.
  5. Place mold in freezer.
  6. Tap out your 3-D eggs.
  7. Wrap in colored foils.
Completing your cupcake:
  1. Bake cupcakes. and let cool.
  2. With a spatula ice cupcakes with buttercream icing.
  3. Color angel flake coconut with green food color and sprinkle on top of icing.
  4. Place Foil eggs in cupcake.
  5. With the modeling chocolate roll out 2 tubes and twist together to form a rope. Measure approx. 6" long pieces and push into sides of cupcake to form handle.
  6. Use a little icing and attach bow.

Now you can eat them or use them as a centerpiece for your holiday table.

Making 3-D Solid Chocolate Pieces

Easter will be here before you know it. Make your own 3-D solid bunnies quick and easy! Remember, you can use any mold you like that has a front and a back or a left side and a right side.

Supplies Needed:
Extras:
  • Candy eyes # (S-5100B)
  • Gold bow with twist ties # (GTTB)
  • Angel flake coconut, used for grass on basket # (CK76-301)
  • 1/2 lb. dark green chocolate  # (MDGH)
  • Chocolate foil eggs or jelly beans. (Available at store location)
 
 
Molds cut.

Molds with binder clips, ready for pouring chocolate.
 
Lets Get Started
  1.  With a pair of scissors cut the pieces out of the mold leaving an 1/2" to an 1" around the cavity of the mold.
  2. Cut a hole in the bottom of the mold.
  3. Line up the edges of the mold and use the binder clips to clip the mold tightly together.
  4. Melt the chocolate. We suggest using a plastic container and microwave at 1/2 power and for 30 seconds at a time. stir after each 30 seconds until melted.
  5. Pour melted chocolate into bottom of the mold.
  6. Place in freezer for approx. 20 minutes. It should look like the mold is pulling away from the mold is most areas.
  7. Pull off clips, and remove one side of mold. If it does not want to come out, with slight pressure, put the mold back into freezer for about 5 more minutes
  8. Un mold Bunny Rabbit.
 
*HINT: To make bunny sit perfectly flat,take a cookie sheet and place it on the stove burner on low. Take bunny and set on the cookie sheet to melt the bottom flat, then place on a piece of waxed paper. It dry's in seconds.
 
To Decorate:
  1. Use chocolate as a glue and add eyes & bow.
  2. Melt dark green chocolate and add angel flake coconut so its thick.
  3. Spoon on top of basket.
  4. Add chocolate foil eggs or jelly beans wile the chocolate is still wet.
  5. Let harden. 


Now you are ready to wrap it and put it in an Easter basket! Have Fun!
